   In WordPress private posts/pages are displayed on category pages when logged in as administration, but the same seems not to be the case for products. Why is that?

   In my case I enabled authors to manage products using the User Role Editor plug-in.

   I tested this on WP 3.5 with WC 1.6.6.

   I believe you need to also add the shop_manager role.

   Does administrator not have the capabilities of the shop_manager role? Is it possible to have one user that has the capabilities of both?
