Adding different handling charges for different items?

Have latest goldcart and fedex plugins. Organico theme. Want to add handling charge specific to size of product for boxing cost. Would be great to have this also vary with variations (different length of products). Is this possible without modifying code? I think this will require code changes. just starting to learn php, etc so some detail would be helpful.
