add custom options in product/catalog manager?

Hi
I’m setting up a bookshop. I have a doubt before I advance any further with woocommerce.

I need to add at least the custom options “publishers” and “shelf code” to my products/catalog manager, alongside the catalog standard: “name”, “category”, “price”, “inventory”, etc…
I really need the option of sorting my catalog products by these other options on the backend.

Is there a way to go about this? I need to know this before advancing any further in the project!
