I can see that email ids of users in a sub-site dashboard can be viewed by sub-site administrators . I don't want to let the emails viewable other than the super admin.

Probably the best way would be to make a plugin that removes the column, OR to make a new user role for Admins that doesn't have that cap.
But that begs the question of 'Why?'
An admin of a site is meant to be the ADMIN. That means they should know the email address so they can add users to block/mod lists or contact them with issues. Also remember the admins will see the emails in the comments section.
