I realize that you can add JS/CSS files in the Admin and choose which Templates they get applied to, but I am wondering if there is a way to exclude certain templates. The reason this would be better for me is that we have a lot of different template where 95% of them use the same CSS/JS. So, it is much easier to say use this CSS for ‘All Templates’ then to individually add the same CSS file for every template. If we could exclude pages from getting that insert after the opening head it would be great. Even a PHP function like DONOTCACHEPAGE for minification additions would be great. Is there any way to accomplish this?

Ah, you can exclude pages specifically to accomplish this. It seems there is no way to exclude a template though. Excluding a Page can accomplish the same thing though with a little more work.
