Is there any way to hide users from the author list? It even seems to list subscribers, and that doesn't seem right.
I want to have one or two more admin users that don't post, but just help with admin functions. But I don't want them listed in the author list.

Have you seen the page for wp_list_authors?
If you use <?php wp_list_authors('hide_empty=1'); ?> then any users without posts won't be displayed.
