I am missing something simple

How do I make multiple categories?

IE my website ranks restaurants by accessibility. And I alrdy have a lot of dining out resteraunts ie chilis entered.

But now I want to add a whole new category “Fast Food Restaurants” and just include Fast Food restaurants but everytime i add a new category widget, it includes all of my dining out post from my first category.

So how do i stop this and make each one a unique category?
