some yes some no.. one particular page only should show one category of posts
Are these category pages or Pages of Posts?

Well, that’s a page of posts (as opposed to a category listing). If the listing isn’t correct in these templates, then it’s usually because of a problem with the custom query being used.

Ok so here is the one that is really messed up.. http://schoolofct.com/wordpress/articles/fabfiles/
should only be showing category ‘fabfiles’ and is showing ‘ATA’ ‘Ask Aromatherapist’..
I don’t know the Weaver theme myself but you need to start by examining the template being used on that page. Is this template used on other Pages of Posts?. If so, how are the relevant category ids/names passed to the template?

Ok so I made a child theme.. and now should I make a category-ID.php file in there?
