I'm shutting down my site soon but I don't want to loose all my posts. Is there a way where I can save them all in an easy to read format? And keep them in my computer or maybe CD? Thanks.

Just in case you want to restart your blog later I'd suggest doing a backup of your database. In a sense that backup can be machine readable. Try it to see if it's acceptable.
Might also want to backup all your WordPress files and folders.
