How to change Dates/Hours with a free choice ?

Often it’s useful to be able to chose freely the Date and/or Time of a Newspost (fex. to restore old posts, to better arrange a series of newsposts according to unfolding events, etc).
Can it be done with WordPress, or not ?
And if yes, how ?
