Do they need to be pages or …?

Perhaps more to the point: What do you plan on doing with the information? Maybe a more explicit example would help 🙂

yes, pages. I have a mu site that will have a sign up form and the simple stuff will be there yourname.domain.com, username, password, public or not, but i want a more advanced feature of after all that stuff, when they get the conformation link back it goes to another page that has a bunch of other fields that would be filled in and processed into pages. I don’t want to teach my clients wordpress, i want them to fill out a form and be done.

Then you need a developer I suspect. There aren’t any known plugins that do that right now.
