Do you want to keep or eliminate the accented characters in your meta tags?
More importantly, the word “meta” is very confusing in WordPress and other programs. So are you referring to:
* meta tags you added to your header.php template file for keywords, title, and so on?
* the post meta data section, seen in sidebars and at the top or bottom of post content that explains the date, time, author, and other information related to that post?
* the “meta” section in the sidebar which displays a link to login, wordpress, XHTML and CSS validation and other links?
So, we need you to be a little more specific.

I mean the meta tags I added to my header.php page (description, keywords, etc.). I want to keep the accented characters.

Since this is more of a foreign language issue than a WordPress issue (it doesn’t “change” the header information code), I did a search on google for using such character codes in the meta tags.

Yes you are right.
But contrarily to my other web sites, the meta tags of my wordpress weblog keep their special entities when I view the source.
