   Take a look at http://wordpress.org/extend/plugins/wp-contact-form/

   Not sure if it's the most secure, but it's fairly streamlined and westi is one of the prime members of the WordPress development team.

   To add to what MichaelH posted, DagonDesing's Secure Form Mailer plugin for a single or multiple instances of contact form to one or more contact/s - I'm using it for WP/WPMU.
