I see that sitemaps can include tag pages and many other things. How much of a memory churn does that wind up being? I mean, I must have 1000s of different tag pages. Is there a trade off here? If it's a problem, can I just do certain key tag pages?

actually you don't even need to add them, since Google cares most about the single posts. But if you want to add them, as long as you're not hitting your servers memory or time limit, its no problem. Just give it a try :-)
