I'm freakin' out here because I just upgraded one of my clients websites from 3.0 to 3.01 and I had altered the default theme for 3.0 to suit the website, and have lost all of these changes with the upgrade. Is there any way I can undo this?

no, unless you made a backup?
In future it is better to create a child theme, as then the changes won't be overwritten each time.
No, thats why you should always keep backups.
See if your webhost has a backup
And next time don't edit the default theme or at least put it in another folder. Every upgrade contains the default theme that will overwrite the existing copy.
