   I have tried many many time to update my page template and it doesn't update from within the wordpress editor...

   any ideas why that might be the case?

   What do you mean exactly?

   If you are talking about custom page templates, the only thing you will see in the WP editor for pages that have that template assigned is the actual post data, which does not exist in the file itself.
