   When I use the Contact Form 7 plugin (without MailPress), mails are sent correctly (the "From" address is correct). With the MailPress plugin installed, the "From" email address is always the administrator's address. The "Reply-To" address is the address that was provided by the person sending the message.

   In addition, ALL mails are now being sent by MailPress, including mail sent from the contact form (Contact Form 7).

   OK...I'm really NOT stupid. I just unchecked "MailPress version of wp_mail, in the MailPress settings. All is good. My apologies.
