   How do I edit the menu bar? Specifically I want to remove the "about" button on the far left side.

   In the dashboard, click on Manage -> Pages
   You should see a check box date and title
   click on the check box of the page you want to delete and press the delete button above the checkbox. The page that you want to delete must have a checkmark in the checkbox.

   In your case above, it would be the one with about under the title heading

   Its a great WP Theme. You can create Submenus (Flyout) by creating pages under a main page. But the Problem is: When you create more than 2 submenus IE6 and Safari will only give access to these 2 by mouseover. Mouseover the submenus below- and the flyout disappears. Any Ideas?
