Pages – Getting sub page (for portfolio items)

Hi,
I’m trying to set up my new portfolio site using WordPress.
I’m customizing (heavily) a theme i like, and would like to add a page called “Work”

This would be a page, with child pages set up for individual portfolio items.

What would be the best way to select child pages to display on that page?
I would like to display the Title, and maybe some custom fields? such as description / client / image etc…?
