Would it be possible to link directly to the write post page in the admin area and a specific category is already checked?
For example:
http://xxxxxxx.com/wp-admin/post.php?category=wine
Would that be possible in some way?
Link to a category within admin area (10 posts)

Make it the default category (admin > Settings > Writing) and in that case even if you don't check any category box, the posts will go to the default category.

I'm sorry - but why? This really doesn't make much sense. maybe if you'd explain *why* you want this done, a better option/solution for you could be suggested?

It important that they add the correct category before publishing. I know I can instruct them to do this the correct way but as most people I don't think they will read my "guidelines".

First of all, I wouldn't let them to publish - that is too much capability for a stranger in a blog's admin.
Just keep them "contributors" and you (or another higher level user: editor, admin) will have to approve the posts for publishing... and that more knowledgeable person can set the category. Makes life easier and safer. -
Oh. Okay - so you want to restrict a category to a user. Yeah, you can't really do that. There's a few plugins out there that supposedly work, but so far I haven't been able to do it (I have a site where I need the same thing, and have been working on trying to figure this out myself)
There's a list of plugins here - and oh look! htere's one I've never seen before that restricts a user to a category. I'm gonna have to check that one out.
But yeah, you'll need a plugin to do that.

@doodlebee: Firsly I just want to make it easier for my users. Secondly I want to restrict the users to only see some categories. Thanks for the link. I'll also check out some of the plugins on that page.
