Don’t Want Some New Posts to Appear on Front Page

I have a blog on which I have created several categories for different posts. I do not want all the posts to appear on the blog home page but don’t know how to stop it.

I assigned this latest article to only one category yet it still is appearing on the front page. How can I make one of my categories the default page for mydomain/blog and other categories only accessible through links provided.
