Portfolio categories and posts not showing

Hi,
I had my portfolio working perfectly but I had only added 1 image as the featured image for all of my posts while I was collating the rest of my images to use.
I then deleted that image and have re-assigned different images to all of my posts.

Now for some reason my portfolio page only shows 2 out of my 4 categories at the top and only lists 2 out of my 12 portfolio posts on the page?

I’ve deleted and recreated the portfolio page with a different slug, I’ve reset my permalinks, I’ve trashed all of my posts then restored them all but nothing seems to fix it?!

Any help would be most appreciated.
