Jetpack’s Mobile Theme follows your site’ reading settings, as set under Settings > Reading in your dashboard.
If you’d like to display a static front page instead of a list of blog posts, you can change your settings as explained here:

Thank you for your response. I do have ‘Reading’ set to ‘display latest posts.’ This is because I have a photo slideshow as my home page through my theme that appears on the desktop version of my site.
When I switch to a static page it displays on the mobile version correctly, but not the desktop. Is there a way to change this on the mobile version only? i.e., show a static page on the mobile version only?
Also as a note, on the desktop version my ‘blog’ page displays latest posts but on the mobile version, the ‘blog’ page does not show any posts, just an option to leave a comment.

I’m not familiar with your theme, but could you check if it offers a “Home” Page template (see more information here)? If so, set the custom front page in your Reading settings, then go Pages > All Pages, and edit your home page to use the “Home” Page template.
If it doesn’t offer such option, I’m afraid you won’t be able to get a good display in both the theme and Jetpack’s Mobile Theme.
