Simple Product with Attributes

I’m trying to add attributes to a product, but I don’t really want to add variations to the product, as I don’t need to manage stock or have different prices for each attribute.

I swear I used to be able to do it by setting the product as a Simple Product and adding the attributes. I’ve even checked the box that says Visible on the product page, yet I don’t get a drop down box with the Attributes.

I’ve checked the code to make sure there isn’t a style hiding the drop down box.

Any ideas? Is this still possible?
