Only use check-out page for offline credit card processing without shop/cart

I am trying to install woocommerce and bought a wp-lab plugin for offline credit card processing that integrates with woocommerce.
I have successfully installed and configured both, but now I realized that woocommerce wants clients to go through a shopping system / cart/ and then check out – All we want for our hotel (www.cabinasjimenez.com) is that clients submit their credit card details online securely so that we can process them offline. Most of the time we don’t process them, but basically the credit card reservation gives us a guarantee they’re coming, and in case of no-show we may charge their card. Since the costs we would charge the client varies, and is just for “holding” their room, we can’t really have a shop and cart system, and exact amounts. It would be more like just having the check-out page and have clients submit their credit card details and billing address online.
Is this possible? How can we cancel out having a “shop” and a “cart” and just have clients go straight to check out?
