Using shortcode to display taxonomy data only

Hi

Was wondering how to display the taxonomy data only on a post without the taxonomy name being displayed.

example
custom taxonomy set as hierarchical: color
fields: red, blue, green

If red is selected on post and shortcode [xy_color] inserted I get color red showing on my post
What I would like is just red without the taxonomy name color.

Any assistance will be greatly appreciated
