Deciding between categories and tags is largely a matter of personal style and the nature of the items you are organizing. The main difference between tags and categories is that categories can be organized into a hierarchy. For example, a “fruit” category can have a child/sub category “apples” and then within “apples” a further refinement such as “Fuji” or “Gala”. A single item can be assigned to fruit/apples/Fuji and you can search for it at any of the three levels.

Tags don’t have any structure. They do, however, have the “tag cloud” user interface feature that lets you see at a glance which values are used a lot and which are used infrequently.

The WordPress documentation says that categories are like a book’s table of contents and tags are like index entries.

If you do a Google or Bing search on “WordPress categories and tags” you will find many articles and blog posts that discuss how to use them both for good effect. It really depends on what you’re organizing.

Thanks for your interest and for using the plugin. Let me know if you have any more questions.
