Categories & Tags getting deleted

I am using this plugin to edit only certain custom fields. Not Categories and not tags. However, when the edit is submitted, the Categories and Tags of that post are overwritten, or more descriptively deleted. Is there a way to not allow this to happen. It doesn’t happen to the custom fields that I do not allow to be edited.
