Oh you are probably talking about the list of categories a user sees when writing a post?

If so, then you might use these two plugins to restrict categories users can assign when writing posts, but the restriction does not carry forward to view the posts on the blog.
http://wordpress.org/extend/plugins/level2categories-2/

Also, is there a way to hide the category name itself from the category list that users see?

If you are asking about what you see when visiting the blog and clicking on a category link, that would be something you control with your Category Templates.

Also see:

Thanks. This worked for me.

If I were to make a suggestion, the menu for excluding categories is a little confusing. For example, why am I setting up the "Inclusion/Exclusion" then picking "Exclude from...? Why couldn't we just use the second "Exclude from..." area?

Also, is there a way to hide the category name itself from the category list that users see?

Anyway, thanks again. The main thing I needed was for the post not to show up on the main page, and it achieved that purpose.
