How to tag a word?

Just add a # character before the targetted word.

How to not tag a word even if I put a # before?

Put a \ character before the #, like this #notatag

Can I tag a sequence of words?

For the moment, not, because WordPress doesn't support spaces between words in tags (it is replaced by an another character), and I'm not really motived to provide a solution...
