Why can't i set Alternate Text?

Alternate texts are used by screen readers to replace the image you're using, so it's really not a good practice to give it a default value, although a value should be provided for every non-decorative images.

Also, the filter hook used to set the defaults can't, at this point, take information pertaining to the wp_postmeta db table.
